Our cheese is freshest because we pick up the milk daily from the dairy.

Our cheese healthiest because we use only milk from dairies that meet our strict standards; not from coops.
We use only milk from cows that are free of antibiotics, steroids, hormones, BST, and animal by-products.

Our cheese is tastiest because we use low heat pasteurization and the cheese as if it were 100 years ago.

Asadero
– A mild flavored cheese that melts with the same texture of a young mozzarella.

Cheddar – A whole milk cheddar taste. A smooth and creamy texture. Very fresh flavor 30 to 60 days aged.

Cheddar Curds – The freshest cheddar you can get still has the squeak. Great fun for a snack. Guaranteed to disappear.

Colby – Our Colby has a very smooth consistency.

Fiesta – You can’t beat it for a snacking cheese. Made with fresh white cheese and bread and butter jalapeno’s.

Fresh Goat Cheese – This is a fresh cheese that is slightly dry and crumbly.

Goat Cheddar – This is a delightful goat milk cheddar that is made with unpasteurized milk. It has aged for over 60 days to give it a smooth creamy texture with an amazing goat flavor.

Goat Feta – A mildly flavored fresh goat feta. If you like a stronger flavor, let them set in the fridge for about 30 days before you open them.

Goat Mozzarella – This is a very mild goat flavored mozzarella yet still very rich and creamy.

Goat Ricotta – This is the best to cook with or makes wanderful dips. Use this cheese to replace cream cheese in dips. 

Horseradish Cheddar – This is a fresh cheddar with slight horseradish flavor. This is excellent on roast beef sandwiches or on crackers with summer sausage.

Mozzarella – Whole milk mozzarella aged 30 to 90 days. Can be frozen.

Onion Cheddar – A great combination of cheddar and onion flavor.

Panhandle Cheddar – Our great cheddar without the annatto coloring.

Parmesan – Aged and dried whole milk cheese. Make a pan of lasagna with this topping it.

Pepper Jack – White cheese with assorted peppers. A cheese with some extra gotcha flavor.

Prairie Fire – Our white Cheddar with habanero, onion, and assorted peppers for a very spicy cheese flavor.

Queso Fresco – Fresh Cheese. Very mild, gives your beans a creamy flavor.

Ranch Cheddar – White cheddar with dill, onion, and garlic combination to tease your pallets.

Ricotta – This is a cream style ricotta great for cooking.

Smoke Cheddar – Pleasant Smokey flavor with out creamy cheddar.

Smoke-n-Fire – The perfect hamburger cheese, has a little Smokey flavor with a spicy kick.

Swiss – This is a very young cheese aged just over 90 days. If you like a stronger cheese, it can be aged in the sealed package up to 90 more days.

Top-notch – Cheddar cheese with the exact blend of garlic, onion, and chives to go on a hot baked potato.
