Our cheese is healthiest, because we use only milk from dairies that meet our strict standards, not from coops. We use only milk from cows that are free of antibiotics, steroids, hormones, BST, and animal by-products. Our cheese is tastiest because we use low heat pasteurization and process the cheese as it was 100 years ago.
